I'm a great fan of chicken soup as a natural cure for all ills, and I liked the idea of giving it an Italian twist. The original recipe uses cooked shredded chicken, but I didn't have any so I decided to buy a whole chicken, use some meat from that, use the carcass to make my own stock, and freeze whatever I didn't use for the soup. I asked the butcher to debone the chicken for me. Also, I used the last bit of my garden basil but you can use dried (as the original recipe does).

  2. 2 1/2 litres water
  3. 1 chicken carcass
  4. 1 onion
  5. 2 bay leaves
  6. 1 clove
  7. 1/2 lime
  8. 3 cloves garlic

  10. 1 onion, diced
  11. 2 cloves garlic, minced
  12. 2 large carrots, peeled and diced
  13. 1 jar canellini beans, drained and rinsed
  14. 1 tin tomatoes
  15. 1 litre chicken stock
  16. 1 bunch basil
  17. to taste salt & pepper
  18. 1 cup small pasta or noodles
  19. Some chicken - I used 2 thighs and half a breast
  20. Freshly grated parmesan, for serving

Instructions to make to make Tuscan Chicken Soup

  1. You can use anything to make the stock as in the carcass and a few other flavours. Put everything in the pan with 2 1/2 litres water and bring to the boil. Once boiling turn down to moderate, skim foam off, cover and leave to simmer for an hour.
  2. Cut the thigh meat and 1 1/2 chicken breast into bite-sized pieces
  3. (I decided to roast rest of legs and wings in the oven to make a Cesar salad tonight or tomorrow and to freeze the other 1/2 breast for future use)
  4. Brown the chicken in a little olive oil and salt
  5. Add the finely chopped onion and garlic, stir and cover for 10 minutes over a low heat
  6. Drain the stock and pour half of it (1 litre) into the chicken pan.
  7. Bring to a boil, stir in the carrots, beans, tomatoes and herbs. Reduce the heat to medium, cover and let this simmer for 20 minutes.
  8. Take the lid off, add the pasta and cook according to instructions
  9. When the pasta is done turn off the heat
  10. Serve in bowls
  11. Add Parmesan cheese and enjoy!!!!!
